Vinification: The grapes, carefully selected, are processed immediately after harvest. Upon arrival at the winery, destemming and crushing are carried out. The must paste obtained is transferred to refrigerated fermenters, where it undergoes cold maceration on the skins for 5-7 days. Subsequently, the wine is separated from the skins, and fermentation begins. Once fermentation is complete, the wine is transferred to steel tanks while awaiting bottling. All processes are carried out at controlled temperatures to maximize quality.

Aging: In steel tanks for 7-8 months, followed by further aging in the bottle for 12-18 months before being released to the market.

Characteristics: A golden filigree accents the straw-yellow color. The nose opens with fruity notes of quince, aromatic herbs, and balsamic hints. On the palate, it starts soft, evolving into fresher notes. With great gustatory and olfactory balance, it recalls hints of helichrysum and licorice on a long, enveloping finish. A “meditation” white wine.

Pairings: A versatile wine, ideal for pairing with elaborate fish dishes.
